There needs to at least be an "Other/Not Listed" Direct Category, as all the options are too specific, and only cover a narrow range of issues. Do Better, Twitch

I'm having this same problem myself. 3 days ago I uploaded a highlight, just over an hour in content, on a channel I edit for. It still hasn't finished "processing", and the original stream expires in 3 days. Am I gonna have to remake the whole highlight???
It's worth noting that I have previously published a MUCH larger highlight, and THAT highlight was available within hours of publishing.

This really needs to be a thing. Even just being able to visually hide said emotes from your menu would be a major difference.
I got myself banned from one of my favorite channels because I made some serious mistakes. I am still in the process of getting over the emotional trauma of this event, and having to see the streamer's icon and name in my emote menu on account of a single bit emote I had earned before being banned is incredibly painful. It's just another reason I've been mostly avoiding Twitch altogether in recent months.
I'm trying to move on, and it would be an immense help if I could just hide that emote, and the channel's tab, from the menu.
