Simply put, advertisers can decide to not run ads on certain types of content. Streamers should have the option to choose what ads appear on their streams, as well. With Twitch allowing a cryptocurrency company to purchase/run ads for a period of time on their platform here soon, I don't want my viewers to see ads on my stream for a "product" I don't support myself! I'd rather be able to select ads that align with my tastes and would be safer for my viewers.

At the end of the day, allowing streamers to filter what ads they run on their channels opens opportunity to see the statistics on what products are popular with streamers, as in they're choosing to allow that product to be advertised on their stream, as well as advertisers gaining insight into who likes their products, which can influence streamers and viewers to buy said product, or even possibly sponsorships in certain cases, leading to more revenue for Twitch and creators.
