from my perspective twitch is supposed to be a personal experience between me, the creator and the rest of the creators community.
regardless if im the creator or a viewer in both cases im strictly against ai being trained on what i would consider to be a private situation because doing so would make "private" interactions publically available to every user of the ai as it would be able to repeat what happened in any of those moments.
Even if legally this isnt a violation of privacy i still consider it personally as one and it would make me consider to stop using twitch entirely.
Also such a giant data harvesting operation should be opt in and not opt out, so that only people explicitly agreeing to be ok with this are actually included. historically opt out has had a horrible track record of people only becomming aware after the warning period and data being collected before people are even aware it exists and can voice there opinion to it.
I see this as an intentional trap to trick people in to participating with something thats known to be unpopular with the larger twitch community.
I do not know what the goal is to do with this training data but if it has anything to do with replacing people then that would make twitch pointless if your remooving the human part of human interactions, interacting with a robot is either not nearly as fun or if thats what i desire i can just go to my chatbot rather then twitch or amazon for a better experience.
